The Rubia Gallega is a breed of cattle native to the Galicia, in the North west if Spain. The meat is covered by a delicious creamy fat coat and the huge steaks Spanish butchers get from these animals are called Chuletón.
The flavour will explode in your mouth, it is rich and succulent, with powerful blue cheese notes and mushrooms around the edges. its spicy aftertaste and it is dry aged for at least 40 days...which make it so very special.
