  • 1 tbsp unsalted butter

  • 1 head of cauliflower (diced)
  • 1 red onion (diced)
  • 2 spring onions finely chopped
  • 1 handful of peas
  • The juice of 1 lime
  • 4 hard-boiled eggs (finely chopped)
  • 100g free range bacon (chopped)


Melt half the butter in a large frying pan. Add the red onion and cook until softened and beginning to brown. Next add the bacon and cook until browned. Add the spring onions and lime juice. Stir in the cauliflower rice and eggs and heat for another 2-3 minutes until hot through and serve. (You could use cooked brown basmati rice in place of cauliflower rice and cooked salmon instead of bacon).
