You won’t find a fluffier egg-free pancake recipe than this. The Vegan Pixie has taken the time and effort to perfect this vegan pancake recipe, so that you don't have to. Enjoy these on a lazy weekend morning or for a special occasion!
Ingredients:
125g self raising flour
- 3 tbsp sugar
- 1tsp baking powder
- 150ml soya milk
- 1 tbsp vanilla extract
Method:
Sift together all the dry ingredients and whisk then keep whisking and add in all the wet ingredients until all combined
- Place frying pan over a medium heat and heat oil then add pancake mixture, making 3 at a time (this should make 6 pancakes) and fry until bubbles start to form and pop on the surface of each pancake then flip and cook for another 1 minute
- Stack the high and top with whatever your heart desires!
