Perfect for serving alongside a roast dinner, or with canapés and bubbly or cold beer for a special occasion.
INGREDIENTS
2kg Potatoes, chopped, skin on
4 Tbsp Olive Oil
4 Tbsp Marmite
METHOD
Pre heat oven 220c
Add 100ml oil to a baking tray and heat in oven.
Par boil potatoes for 7 mins, until they just begin to soften.
Drain water thoroughly, tip potatoes back into hot pan. Add oil and marmite, pop the lid on and shake until potatoes are thoroughly coated.
Tip into heated baking tray and cover in the hot fat.
Cook for 10 mins, turn potatoes, then cook for another 10 mins or until darkened around the edges.
