In this episode, Jane makes delicious and simple scones with fig and honey all in one easy pot with no mess or fuss.
INGREDIENTS
100g plain flour
½ tsp baking powder
Pinch salt
1 level tbsp sugar
1 egg
4 tbsp milk
4 ripe figs
Runny honey
METHOD
Preheat a heavy skillet, frying pan or flat griddle pan over a medium heat.
Mix the flour, baking powder, salt and sugar together in a large bowl with a whisk.
Make a well in the centre and crack in the egg.
Whisk together, adding the milk one tablespoon at a time until you have a thick, smooth batter.
Grease the pan by running a little butter over the hot surface with some kitchen paper.
Drop tablespoons of the mixture onto the hot pan. You can cook as many as you can comfortably fit in your pan without them touching.
When the top is covered with bubbles, and the underneath is golden brown, flip them over.
Top two drop scones with half a fig and a drizzle of honey.
Any leftover drop scones can be left to cool, then served cold at a later date, or easily reheated in a toaster.
