As the evenings begin to draw in, there are few things better than putting a proper roast on the table.

This autumn roast chicken recipe combines a beautifully golden free-range chicken with garlic, thyme and seasonal root vegetables, all roasted together so they soak up those delicious cooking juices.

It's simple enough for a relaxed family Sunday lunch but impressive enough when you've got friends around. And with the chicken and vegetables cooking together, there's less washing up afterwards too.

The secret is starting with a quality British free-range chicken, seasoning it generously and giving it plenty of time to rest before carving.

Ingredients 

For the chicken

  • 1 whole free-range chicken, approximately 1.8-2kg
  • 50g unsalted butter, softened
  • 4 garlic cloves
  • Small bunch of fresh thyme
  • 1 lemon
  • 1 tbsp olive oil
  • Sea salt
  • Freshly ground black pepper

For the seasonal veg

  • 4 carrots
  • 3 parsnips
  • 2 red onions
  • 500g potatoes
  • 1 small swede
  • Half a butternut squash 
  • 1 whole garlic bulb
  • 2 tbsp olive oil
  • 4 sprigs fresh thyme
  • Sea salt
  • Freshly ground black pepper

For the gravy

  • Roasting juices from the chicken
  • 500ml chicken stock
  • 1 tbsp plain flour
  • 25g butter

Method 

  1. Prepare the chicken

    Remove the chicken from the fridge around 30 minutes before cooking.

    Preheat the oven to 200°C / 180°C fan.

    Pat the chicken dry with kitchen paper. This helps the skin become beautifully golden and crisp as it roasts.

    Season the cavity with salt and pepper, then add half the lemon, two lightly crushed garlic cloves and a few sprigs of thyme.

     

  2. Make the garlic and thyme butter

    Finely chop the leaves from a few sprigs of thyme and crush the remaining two garlic cloves.

    Mix them into the softened butter with a generous pinch of sea salt and freshly ground black pepper.

    Carefully loosen the skin over the chicken breasts with your fingers and spread some of the butter underneath.

    Rub the remaining butter over the outside of the chicken.

    Finish with a drizzle of olive oil and another little seasoning.

     

  3. Prepare the autumn vegetables

    Peel the carrots, parsnips, potatoes and swede and cut them into generous, roughly equal-sized pieces.

    Quarter the red onions and cut the garlic bulb in half through the middle.

    Place everything into a large roasting tray, drizzle with olive oil and season.

    Scatter over the thyme and toss everything together.

     

  4. Roast the chicken

    Sit the chicken in the centre of the vegetables, breast-side up.

    Place in the oven and roast until the chicken is golden and completely cooked through.

    Cooking time will depend on the exact weight of your bird, so check the packaging or butcher's guidance and use a meat thermometer rather than relying solely on time.

    Check the thickest part of the chicken has reached a safe internal temperature of 75°C, taking care not to touch the bone with the thermometer.

    Turn the vegetables once or twice during cooking so they brown evenly.

     

  5. Rest the chicken

    Once cooked, transfer the chicken to a carving board.

    Cover loosely with foil and leave it to rest for 15–20 minutes.

    Don't skip this step. Resting allows the juices to redistribute through the meat, helping keep the chicken tender when you carve it.

    Keep the vegetables warm while the chicken rests.

     

  6. Make the gravy

    Carefully spoon away any excessive fat from the roasting tray while keeping those flavour-packed roasting juices.

    Melt the butter in a saucepan, stir in the flour and cook for around a minute.

    Gradually whisk in the chicken stock, followed by the roasting juices.

    Simmer gently until the gravy has reduced and reached your preferred consistency.

    Taste before adding any additional seasoning.

     

  7. Bring everything to the table

    Carve the rested chicken and serve with the golden autumn vegetables.

    Pour over plenty of hot gravy and add your favourite seasonal greens on the side.

Butcher’s Suggestion

Don't judge whether your chicken is cooked purely by looking at the skin. A beautifully golden bird can still need more time inside.

Use a meat thermometer in the thickest part of the meat to check it's properly cooked, then give the bird 15–20 minutes to rest before carving.

That little bit of patience makes a noticeable difference to how juicy your roast chicken is.

What vegetables are best with an autumn roast chicken?

September is a great opportunity to start bringing root vegetables back onto the menu.

Carrots, parsnips, potatoes, onions and swede all work beautifully because they can roast alongside the chicken and absorb the cooking juices.

Butternut squash and even pumpkin can be a great, filling option.

You can change the vegetables throughout autumn depending on what's in season.

How do you keep roast chicken juicy?

Start with a quality chicken and avoid overcooking it.

Adding butter beneath the skin helps protect the breast meat while adding flavour, while using a meat thermometer gives you much more control than relying on cooking time alone.

Finally, rest the chicken before carving it.

What can I do with leftover roast chicken?

Leftover roast chicken is incredibly versatile.

Use it the following day in sandwiches, salads, pies, soups or a quick chicken curry.

And don't throw away the carcass. It can be used with vegetables and herbs to make homemade chicken stock, giving you another meal from your Sunday roast.
