There’s something very satisfying about a good pork chop, simple to cook, full of flavour, and perfect for an easy midweek supper.
In this recipe, pork loin or chump chops are marinated in a bright, citrusy mix of orange, soy and maple syrup, which caramelises in the pan to create a rich, sticky glaze. It’s a straightforward dish that feels a little special, with just the right balance of sweet, savoury and tangy flavours.
Ingredients (serves 2–3)
- 3-4 pork loin or chump chops
- 3 tbsp soy sauce
- 1 tbsp wholegrain mustard
- Juice and zest of 1 orange
- 2 tbsp maple syrup
- 1 clove garlic, finely grated
- 1 tbsp olive oil
- Freshly ground black pepper
- Optional: a small pinch of chilli flakes for gentle heat
Method
- In a bowl, whisk together the soy sauce, mustard, orange juice and zest, maple syrup, garlic and olive oil. Season with a little black pepper and chilli flakes if you like a bit of warmth.
- Add the pork chops and turn them so they’re well coated. Cover and leave to marinate in the fridge for at least 30 minutes, though a couple of hours will deepen the flavour.
- Heat a frying pan or griddle over a medium-high heat. Lift the chops from the marinade (keep the leftover marinade) and cook for around 4-5 minutes on each side, depending on thickness, until nicely browned.
- Pour the remaining marinade into the pan during the last few minutes of cooking. Let it bubble and reduce slightly until it becomes glossy and sticky, turning the chops so they’re coated in the sauce.
- Rest the chops for a couple of minutes before serving, spooning any extra glaze from the pan over the top.
Serving suggestion
These are great with buttery mash or roasted new potatoes, plus something green like tenderstem broccoli or a simple cabbage slaw to cut through the sweetness.
