This recipe is all about balancing sweet, sharp and savoury flavours so the pork gets a lovely sticky glaze while staying juicy inside.
There’s something very satisfying about a good pork chop. It’s simple to cook, full of flavour, and perfect for an easy midweek supper. Here, pork loin or chump chops are marinated in a bright, citrusy mix of orange, soy and maple syrup. The marinade caramelises in the pan to create a rich, sticky glaze.
It’s a straightforward dish that feels a little special, with just the right balance of sweet, savoury and tangy flavours.
Ingredients (serves 2–3)
  • 3–4 pork loin or chump chops
  • 3 tbsp soy sauce
  • 1 tbsp wholegrain mustard
  • Juice and zest of 1 orange
  • 2 tbsp maple syrup
  • 1 clove garlic, finely grated
  • 1 tbsp olive oil
  • Freshly ground black pepper
  • Optional: a small pinch of chilli flakes
Method
  1. Whisk together the soy sauce, mustard, orange juice and zest, maple syrup, garlic and olive oil. Season with black pepper and chilli flakes, if using.
  2. Add the pork chops and turn to coat well. Cover and marinate in the fridge for at least 30 minutes. A couple of hours will deepen the flavour.
  3. Heat a frying pan or griddle over a medium‑high heat. Lift the chops from the marinade, keeping the leftover marinade. Cook for 4–5 minutes on each side, depending on thickness, until nicely browned.
  4. Pour the remaining marinade into the pan during the last few minutes of cooking. Let it bubble and reduce until glossy and sticky, turning the chops so they’re well coated.
  5. Rest the chops for a couple of minutes before serving, spooning any extra glaze over the top.
Serving suggestion
Serve with buttery mash or roasted new potatoes, plus something green like tenderstem broccoli or a simple cabbage slaw to cut through the sweetness.
