Ingredients (4 burgers)
- 800 g cooked beef brisket, shredded or sliced.
- 1 tsp BBQ spice rub (brown sugar, smoked paprika, cumin, garlic powder, salt and pepper).
- 1 small red onion, sliced into rings.
- 4 slices mature cheddar (optional).
- 4 brioche or seeded burger buns.
- Lettuce leaves.
- BBQ sauce (homemade or your favourite brand).
To serve:
- Add pickled gherkins and/or mustard for an extra kick.
- Serve with chunky chips, slaw and extra BBQ sauce on the side. Perfect for a summer BBQ or a weekend treat.

- Form the patties - Shred the cooked brisket and combine it with the BBQ rub. Shape into 4 burger patties, pressing gently so they hold together.
- Cook the burgers - Preheat your BBQ or a griddle pan to medium-high. Cook the patties for 4–5 minutes on each side, until hot through and slightly crisp on the outside. If using cheese, add a slice to each patty for the final minute to melt.
- Prepare the toppings - While the burgers are cooking, grill the onion rings until caramelised. Lightly toast the burger buns on the BBQ.
- Assemble - Add lettuce to the base of each bun, top with a brisket patty, onion rings and a generous drizzle of BBQ sauce. Place the top bun on and serve immediately.
