There’s nothing quite like the combination of rich, gooey cheese, tender steak, and golden homemade chips. Our take on baked brie & steak cheese fries elevates a comfort food favourite with premium ingredients and freshly made fries, transforming it into a dish that’s indulgent, impressive, and perfect for sharing.

Ingredients

For the homemade fries:

  • 4 large maris piper potatoes, scrubbed.
  • Vegetable oil for frying (or olive oil for roasting).
  • Sea salt.

The decadent toppings:

  • 1 8-ounce wheel of Brie cheese.
  • 1 6-ounce filet mignon, trimmed and cut into bite-sized pieces.
  • 1 tablespoon garlic or herb butter.
  • ½ cup Béarnaise sauce (store-bought or homemade).
  • Freshly cracked black pepper.

Method

Prepare the homemade fries: 

  • Slice your potatoes into evenly sized chips or fries. Soak in cold water for 30 minutes to remove excess starch, then pat completely dry.

  • For fried chips, heat oil in a heavy-bottomed fryer or deep pan to 180 °C (350 °F). Fry potatoes in batches until golden and crisp. Drain and season with sea salt.

  • For a healthier roast, toss the fries in a drizzle of oil, spread on a baking tray, and roast at 220 °C (425 °F) until golden around 25–30 minutes, turning halfway.

Cook the steak bites:

  • Season the filet pieces generously with sea salt and black pepper.
  • Heat a skillet on high, add a splash of oil, and sear the steak evenly, cooking for about 30 seconds per side until browned. Remove and toss in the garlic or herb butter.

Melt the brie:

  • Freeze or chill the brie for 15–20 minutes to firm it slightly for easier handling.
  • Preheat your oven to around 200 °C (aligning with fry roasting), place the wheel of brie (with top rind removed) on an ovenproof dish, and bake until gooey and melted, just as the fries reach their perfect crispness.

Assemble:

  • Arrange the fresh homemade fries on a platter or plate.
  • Spoon the molten brie over the fries.
  • Scatter the buttery steak bites atop.
  • Drizzle warm Béarnaise sauce over the entirety.
