Over the past 12 months, Parson's Nose have been working exclusively with a very small and dedicated olive grove in Southern France.
Nestled in the hills of Provence, a small South facing olive grove on a 35 degree incline and a mixture of rare Tanche, Picholine, Bouteillan and Salonenque olives has been producing some of the finest oil for nearly 40 years.
The olives are picked by hand in November and then they sifted and sorted by hand to ensure only the very best olives make it to the oil. It is an absolute labour of love
Olives go through a number of presses to produce different grades of oil.
The first press is a cold press and it produces the very best oil from the olives. As the process goes on, the temperature goes up and the quality goes down.
Parson's Nose very rare and special olive oil is the first COLD press of a unique blend of Tanche, Picholine, Bouteillan and Salonenque olives.
We only have 30 bottles, that is it and there is no more for another 12 months.
