4 Lamb cutlets

Instructions
- Season the lamb cutlets with sea salt.
- Heat a frying pan until very hot and sear the cutlets for 2–3 minutes per side for pink, or a little longer if you prefer.
- Rest for a few minutes.
- Meanwhile, warm a splash of lamb stock in a small pan just to loosen it, then spoon in a little spicy chimichurri to make a quick glossy sauce.
- Plate the lamb cutlets and spoon over the warm chimichurri stock dressing. Serve straight away.
