Jessica Williams

After growing up on an inspiringly beautiful farm in Southwest Arizona, Jessica moved to New York City to work as a nanny. Because of her passion for cooking, she soon found that she was hired to teach other nannies how to prepare delicious and healthy dishes for the children of New York City. 

Jessica then decided to follow her passion for cooking, beginning formal studies at the acclaimed Peter Kump’s New York Cooking School. After interning at the Four Seasons, Manhattan, she went on to study at the DCT Culinary Academy in Switzerland where she became the First American Female to win the prestigious Gold Medal in KochKunst at the ZAGG. 

Jessica has also worked in London at the Ritz but currently lives in Chicago, where she has been working as a private chef for Chicago families, producing a “recipe” and educational series that aims to further culinary excellence.

Episode Description

In this first episode, you will learn how to make a simple and easy Guinness Mac and Cheese from scratch. Jess takes you through her delicious recipe step by step and her detailed instructions will ensure you get that super cheesy and creamy consistency that we all crave from a comforting Mac and Cheese. These are the American home cooking recipes you'll never get tired of. 

INGREDIENTS

Pasta (Spiral, penne or elbow - as much as necessary)

3 Cups Sharp Cheddar Cheese, grated

2/3 Cups Guinness

1-2 Cups Full Fat Milk

¼ Cup Cream

3 Tbsp Cornstarch

To Taste Salt and Pepper

METHOD

Boil pasta in well salted water and cook until just al dente.

Reserve a cup of the pasta water and set it aside

Preheat a larger stock pot to med-low

Pour in Guinness and milk

Toss grated cheese with cornstarch

Add cheese to the pot

Stir until the cheese melts and becomes completely smooth

Add S&P

Add drained, cooked pasta and combine

Stir in the cream

Add pasta water a little at a time if the cheese sauce is too thick

Check seasoning, add more S&P if needed

Serve immediately
