Jessica Williams

After growing up on an inspiringly beautiful farm in Southwest Arizona, Jessica moved to New York City to work as a nanny. Because of her passion for cooking, she soon found that she was hired to teach other nannies how to prepare delicious and healthy dishes for the children of New York City. 

Jessica then decided to follow her passion for cooking, beginning formal studies at the acclaimed Peter Kump’s New York Cooking School. After interning at the Four Seasons, Manhattan, she went on to study at the DCT Culinary Academy in Switzerland where she became the First American Female to win the prestigious Gold Medal in KochKunst at the ZAGG.

Jessica has also worked in London at the Ritz but currently lives in Chicago, where she has been working as a private chef for Chicago families, producing a “recipe” and educational series that aims to further culinary excellence.

A classic American pudding, this sweet and easy Apple Pie recipe uses ready made pastry, making it that much quicker to rustle up for any occasion.  

INGREDIENTS

2 Pink Lady Apples

2 Gala Apples

1 Tesp Cinnamon

¾ Cup Sugar

1 Cup Brown Sugar

1 (9-inch) Pie dough

1-2 Tbsp Butter

3 Tbsp Cornstarch

½ med Lemon, juiced

1 Tbsp Vanilla paste or extract

1 Egg

METHOD

Clean, peel, de-core, and dice (1inch pieces) up your apples.

Combine apples, lemon juice, cinnamon, sugar, and vanilla in a large bowl.

Toss into the bowl coating the apples thoroughly.

Let stand at room temperature for about 30 mins.

Butter you pie pan

Roll out your pie dough and cut slits in the center.

Add cornstarch to the apples

Pour your apples in the pan

Cover with your pie dough and pinch the edges together

Mix the egg and a splash of water for an eggwash

Brush the pie dough with the eggwash

Sprinkle the pie dough with sugar

Chill in the refrigerator while the oven preheats to 350 C

Bake for 40-45 mins

Cover pie if the crust starts to brown to much
