Delicious and filling, these make an ideal breakfast or afternoon snack with a cup of tea or coffee.

Packed with fruit, these are a great way to introduce some of your five a day in a fun way. Our base for muffins allows you to add fillings as you see fit, maybe you want to change the fruit, or maybe you want to add flavouring of your choosing.

Either way, these are guaranteed crowd-pleasers.

Ingredients you will need:

  • 2 medium eggs.
  • 125ml of vegetable oil.
  • 250ml of semi-skimmed milk.
  • 250g of caster sugar.
  • 400g of self-raising flour.
  • 2 drops of vanilla flavouring.
  • 2 tbsps of honey.
  • 50g of shredded carrot
  • 50g of shredded apple.


  1. Start by preheating your oven 180C/160C Fan/Gas 4.
  2. Line your muffin tray with your cases.
  3. In a large mixing bowl, combine your oil, honey, flour, milk, eggs, carrot, and apple until you have cake batter.
  4. Spoon these into your muffin cases.
  5. Bake for 20-25 minutes.
  6. Check that these are cooked through by poking through the middle. If clear, then they’re cooked.
  7. Leave to cool for at least 5 mins.
  8. Enjoy as you see fit.

Tip: Add cinnamon or ginger for a sweet, subtle spice to your muffins. Perfect for keeping out the winter chill.
