Ingredients:

  • 200g dark chocolate

  • 140g plain flour (or you can substitute this for self raising flour for a more cakey brownie)
  • 200g caster sugar
  • 20g cocoa powder
  • 1tsp baking powder
  • 80ml vegetable oil
  • 1 tsp vanilla extract
  • 240ml soya milk
  • 3 tbsp Lotus Biscoff Spread

Method:

  1. Start by creating a bain-marie by filling a small saucepan half way with boiling water and placing over a low heat, then placing a clean heat proof bowl on the saucepan, making sure the bottom isn't touching the water, then break up your chocolate into the bowl and let it melt slowly.

  2. Whilst the chocolate is melting, sift together the flour, sugar, baking powder and cocoa into a large mixing bowl and whisk to combine
  3. Add the oil, milk and vanilla into the dry mix and whisk until just combined
  4. Pour in the melted chocolate (I always film this step for stories on Instagram because who doesn't love a beautiful chocolate pouring shot!)
  5. Mix again until just combined making sure there is no dry mix around the sides or bottom of the bowl then pour into your lined tin
  6. Melt the Biscoff spread in a clean bowl over the same boiling water used for the chocolate but this will only take seconds!
  7. Dollop Biscoff into random spots across batter and using a clean knife swirl it around through the batter creating a swirl pattern
  8. Bake for 25-30min or until a toothick comes out clean!
  9. Let the brownie cool before cutting them, then serve and don't forget to take a picture, stick it on Instagram and tag me @veganpixie_ so I can drool over them!
