Susie Mandleberg

Chef Susie Mandleberg, originally from Staffodshire and now based in London, has been working at St Clements Café in Parsons Green for some time. 

She specializing in putting together simple, rustic food with bold flavours and posts all her creations on Instagram. 

Having gained a wide following she continues to create new, seasonal recipes and share these with her followers.

Dinner parties can be stressful, constantly thinking of something new and original to entertain your guests with. However, Chef Susie Mandleberg's masterclass is here to help with three amazing Dinner Party Side dishes to help you create stress-free, easy meals for entertaining.

In this episode Susie gives step-by-step instructions on how to make her favourite Chorizo Sausage Rolls. 

It’s a quick and easy recipe that goes down fantastically at any dinner party (especially New Years Eve), so make sure to keep this in mind.

INGREDIENTS

6 Sausages

100g Chorizo, skin removed and finely diced or 3 tbsp N’duja Paste

6 tsp Apple or Cranberry Sauce

1 sheet puff pastry

3tbsp Fennel Seeds

75g Parmesan

Chilli Flakes

1 egg, beaten

METHOD

Peel skins off sausages and add salt and pepper, chorizo or n’duja paste, half the fennel seeds and Parmesan and mix well in a bowl.

Roll out puff pastry and cut into 6 pieces. Smear a tsp Apple or cranberry sauce on each section.

Roll the sausage roll mixture into sausages long enough for each piece of pastry and roll up.

Brush with the beaten egg, and sprinkle each sausage roll with fennel seeds, flaky salt and chilli flakes.

Bake at 200c for 20 mins, or until a deep golden colour.

Allow to rest for 5 minutes, and serve warm.
