  • 1 tbsp butter

  • 50g chorizo sausage finely chopped
  • 200ml of vegetable stock
  • 1 tin of cherry tomatoes
  • 1 onion diced
  • 16oz button (or sliced) mushrooms
  • 1 small can sliced black olives
  • 1 tablespoon dried mixed herbs
  • 1 clove of garlic crushed


Melt the butter in saucepan. Saute the mushrooms, and onion until softened, add the chorizo, garlic, herbs and olives for another minute or two. Add the tomatoes and vegetable stock. Cook over medium heat for 15-20 minutes until reduced down a little. Serve hot as a soup or a pasta sauce over courgetti pasta.
