In this series she cooks simple, practical one pot meals- that sacrifice none of the deliciousness. Jane proves that cooking in a camper van does not mean having to forgo great food!

In this episode, Jane makes egg fried rice. This simple and easy recipe only needs one pot and one dish and is just as delicious. This recipe is fantastic even when you're not camping and looking for a simple dinner. 

INGREDIENTS

1 pouch of microwaveable basmati rice

1 small onion

1 clove of garlic, minced

1 egg

2 spring onions, diced

Peas

Chilli

Coriander

Red pepper

Lime

METHOD

Pre-heat a large frying pan, and add the oil.

Add the onion, garlic and red pepper, stirring well.

Throw in the peas and the rice. If you squish the packet of rice well before opening it, the grains will be separated and save you having to break them apart in the pan.

After a couple of minutes push the mixture to the edges of the pan. Crack the eggs into the centre of the pan and scramble before mixing through with everything else.

Add in the spring onion, coriander and chilli, stir and cook for a minute.

Finally squeeze with lime juice, add a dash of soy sauce and serve!
