Method

1. Prepare the Marinade:

  1. In a large mixing bowl, combine yoghurt, ginger-garlic paste, Tandoori masala powder, ground cumin, ground coriander, turmeric powder, smoked paprika, chilli powder, salt, lemon juice, and vegetable oil.
  2. Mix the ingredients well to form a smooth and uniform marinade.

2. Marinate the Lamb Chops:

  1. Pat the lamb chops dry with paper towels to remove excess moisture.
  2. Score the lamb chops with shallow cuts on both sides. This helps the marinade penetrate.
  3. Coat the lamb chops evenly with the prepared Tandoori marinade, ensuring each chop is well covered.
  4. Place the lamb chops in a covered container or zip-top bag and let them marinate in the refrigerator for at least 2-4 hours or overnight for more flavour.

3. Preheat the Oven or Grill:

  1. Preheat your oven to 200°C (400°F) or heat up a grill.

4. Cooking the Lamb Chops:

  1. If using an oven, place the marinated lamb chops on a baking sheet lined with parchment paper or a greased grill rack.
  2. Bake for 20-25 minutes or until the lamb chops are cooked through, turning them halfway through for even cooking.
  3. If using a grill, cook the lamb chops for about 4-5 minutes per side or until they reach your desired level of doneness.

5. Garnish and Serve:

  1. Once cooked, remove the lamb chops from the oven or grill.
  2. Garnish with fresh coriander leaves (cilantro) if desired.
  3. Serve hot with naan bread, rice, or a side of mint yoghurt sauce.
