Method
1. Prepare the Marinade:
- In a large mixing bowl, combine yoghurt, ginger-garlic paste, Tandoori masala powder, ground cumin, ground coriander, turmeric powder, smoked paprika, chilli powder, salt, lemon juice, and vegetable oil.
- Mix the ingredients well to form a smooth and uniform marinade.
2. Marinate the Lamb Chops:
- Pat the lamb chops dry with paper towels to remove excess moisture.
- Score the lamb chops with shallow cuts on both sides. This helps the marinade penetrate.
- Coat the lamb chops evenly with the prepared Tandoori marinade, ensuring each chop is well covered.
- Place the lamb chops in a covered container or zip-top bag and let them marinate in the refrigerator for at least 2-4 hours or overnight for more flavour.
3. Preheat the Oven or Grill:
- Preheat your oven to 200°C (400°F) or heat up a grill.
4. Cooking the Lamb Chops:
- If using an oven, place the marinated lamb chops on a baking sheet lined with parchment paper or a greased grill rack.
- Bake for 20-25 minutes or until the lamb chops are cooked through, turning them halfway through for even cooking.
- If using a grill, cook the lamb chops for about 4-5 minutes per side or until they reach your desired level of doneness.
5. Garnish and Serve:
- Once cooked, remove the lamb chops from the oven or grill.
- Garnish with fresh coriander leaves (cilantro) if desired.
- Serve hot with naan bread, rice, or a side of mint yoghurt sauce.
