500g or 1kg boneless slabs, this is guaranteed to take you into orbit.
We cooked this on an EGG for 2.5 hours (only) seasoned and in tin foil at 150C. It was perfect. The level of Wagyu fat makes the cooking quicker, but also massively intensifies the taste.
