Ingredients:
2 tbsp vegetable oil
- 1 large onion, finely chopped

- 1-inch piece of ginger, grated
- 2 tbsp curry powder (mild or medium, depending on preference)

- 400g canned chopped tomatoes
- 200ml coconut milk
- 300g cooked turkey, shredded or cubed
- 1 cup frozen peas
- Salt and pepper, to taste

Method
