To use Apple & Mint Jelly with Cider in a recipe, try this delicious pork roast glaze. Preheat your oven to 180°C. Mix 200ml of cider with 4 tablespoons of apple & mint jelly. Season a 1.5kg pork loin with salt and pepper. Sear the pork in a hot pan until browned, then transfer to a roasting tray. Pour the cider and jelly mixture over the pork. Roast for 1.5 hours, basting occasionally. Let it rest for 10 minutes before slicing. The jelly adds sweetness and minty freshness, while the cider tenderises the meat. Enjoy with roasted vegetables.
