Confit of Duck with Puy Lentils Kit
Serve 2 people
This is the most amazing and simple to prepare kit which takes just 20 minutes to prepare.
In the kit is;
- Pre heat your oven to about 200 degrees C and place the confit (skin down) on a baking tray. Cook for 10 minutes and then turn the legs over (skin up) for another 10-12 minutes to crisp the skin. When complete, remove from the oven and leave for 5 minutes before serving.
- Cut the carrot into small cubes and on a low heat, with a little oil, slowly brown off the carrots in a frying pan. This could take about 10 minutes, but do it slowly and do not burn them.
- Chop the red onion into small pieces and add (75% of the onion) to the pan with the carrots. Cook for a further few minutes until the onions start to go translucent.
- Add the Puy Lentils to the onions and carrots and add a small amount of water and oil. Gently mix in all the ingredients in the pan and be careful not to let the lentils stick to the bottom of the pan.
- Chop the parsley, add some to the pan and mix in for about 1 minute. Do not use all the parsley, as some can be for the garnish.
- Grate some lemon zest into the lentils and mix in. Lightly season at this point.
To serve
- Mix the remaining uncooked red onions into the lentil mix and place a healthy spoonful (or 2) in the centre of the plate. Squeeze a small amount of lemon juice over the lentils.
- Place the Confit of Duck on top of the lentils and sprinkle the remaining chopped parsley to garnish.
