To cook marrow bones, preheat your oven to 220°C. Place the marrow bones cut-side up on a roasting tray and roast for approximately 15-20 minutes, or until the marrow is soft, bubbling, and lightly browned. Serve immediately spread onto toasted sourdough with a sprinkle of sea salt and fresh herbs, or use the roasted marrow to enrich sauces, gravies, and other savoury dishes.
