Whole Fosse Meadows Chicken
Garlic bulb
Fresh thyme
Butter
Olive oil
Shallots
Chicken stock (Parson’s Nose stock)
Instructions
Preheat oven to 200°C
Prep Chicken

Pat dry
-
Season generously with salt & pepper

Rub with butter
Stuff

Half garlic bulb + thyme inside cavity
Roast
- Pre heat the oven to 200c
-
Place the chicken, shallots and any remaining garlic in a roasting tray
- Roast 20 minutes per 500g and then an extra 20 minutes
- Remove Chicken from tray to rest for 20 minutes

Add splash of chicken stock to tray

Reduce slightly
Serve

Spoon juices over the bird
