Roast Chicken with garlic & thyme

Serves 4-6

Everything that you need to make this at home. 

Included

Whole Fosse Meadows Chicken

Garlic bulb

Fresh thyme

Butter

Olive oil

Shallots

Chicken stock (Parson’s Nose stock)

 

Instructions

Preheat oven to 200°C

Prep Chicken

  • Pat dry

  • Season generously with salt & pepper

  • Rub with butter

Stuff

  • Half garlic bulb + thyme inside cavity

Roast

  • Pre heat the oven to 200c
  • Place the chicken, shallots and any remaining garlic in a roasting tray

  • Roast 20 minutes per 500g and then an extra 20 minutes
  • Remove Chicken from  tray to rest for 20 minutes
  • Add splash of chicken stock to tray

  • Reduce slightly

Serve

  • Spoon juices over the bird
