Chicken Thighs ( boneless)

New Potatoes

Shallots

Wholegrain mustard

Butter

2 Lemons

Fresh Thyme
Instructions
Preheat oven to 190°C.
Prep tray

Halve potatoes
-
Add halved shallots
- Add sliced lemon
-
Toss with fresh Thyme, olive oil, salt & pepper
Add chicken
- In a frying pan, heat and add seasoned thighs, skin side down. Sear until brown all over

Place thighs in the tray skin-side up on top
Make mustard glaze

Mix mustard, a knob of butter, squeezed lemon juice and splash of water in a saucepan and simmer for 5 minutes.

Spoon over chicken
Roast

40–45 mins until golden and cooked through
Finish

Spoon tray juices over chicken and serve with a salad, if preferred.
NOTE, for 2 people, choose option 250-275g and for 4 choose option 500-550g
