With the bone carefully removed, we score the skin and tie the loin of pork, so it's oven ready. 

Massage a generous handful of coarse sea salt in to the skin before roasting, for the perfect crispy crackling.

All of our pork is prime British, high welfare pork. Responsibly reared, free range in the top of the South Downs, near Brighton.
