This recipe combines the smoky goodness of barbecue with the bold, sweet, and spicy flavours of Korean cuisine. Perfect for a summer cookout or a cosy dinner at home, these ribs are sure to impress.

Ingredients you will need

For the ribs:

  • 2 racks of pork baby back ribs

  • 2 tbsp olive oil

  • 1 tbsp garlic powder

  • 1 tbsp black pepper

  •  1 tbsp sea salt

For the Korean BBQ sauce:

  • 1 cup soy sauce

  • 2 tbsp sesame seeds

  • 4 green onions, finely chopped

  • 1 pear, grated

  • 1-inch ginger, grated

  • 4 cloves garlic, minced

  • 2 tbsp sesame oil

  • 1/4 cup rice vinegar

  • 1/4 cup gochujang (Korean red chilli paste)

  • 1/4 cup honey

  • 1/2 cup brown sugar

Method

Preparing the Ribs

  1. Preheat Your Oven: Set your oven to 150°C (300°F).
  2. Prepare the Ribs: Rinse the ribs under cold water and pat them dry with paper towels. Remove the thin membrane on the back of the ribs for more tender meat.
  3. Season the Ribs: Rub the olive oil onto the ribs, then season them with sea salt, black pepper, and garlic powder. Ensure the ribs are evenly coated with the seasoning.

Cooking the Ribs

  1. Wrap and Bake: Wrap the ribs tightly in tin foil, creating a sealed packet. Place the ribs on a baking tray and bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender and the meat easily pulls away from the bone.
  2. Prepare the Korean BBQ Sauce: While the ribs are baking, combine the soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, grated ginger, and grated pear in a saucepan. Bring the mixture to a simmer over medium heat, stirring frequently. Let it cook for about 20 minutes or until it thickens slightly. Stir in the sesame seeds and green onions. Adjust the seasoning to taste.

Grilling the Ribs

  1. Preheat the Grill: About 15 minutes before the ribs are done in the oven, preheat your grill to medium-high heat.
  2. Grill the Ribs: Carefully remove the ribs from the oven and unwrap them. Place the ribs on the preheated grill and generously brush them with the Korean BBQ sauce. Grill the ribs for 10-15 minutes, turning occasionally and basting with more sauce, until they develop a beautiful, caramelised crust.

Tips for the perfect Korean BBQ Ribs

  • Marinade Magic: For an even deeper flavour, marinate the ribs in the Korean BBQ sauce overnight before cooking.

  • Resting Time: Let the ribs rest for a few minutes before slicing to allow the juices to redistribute throughout the meat.

  • Pear Power: The grated pear in the sauce tenderises the meat and adds a natural sweetness that's quintessentially Korean.
