Ingredients you will need
For the ribs:
2 racks of pork baby back ribs.
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp smoked paprika
1 tbsp black pepper
1 tbsp sea salt
2 tbsp olive oil
For the BBQ sauce:
1 cup/250ml tomato ketchup
1/2 tsp salt
1/2 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1 tbsp honey
1 tbsp mustard (yellow or Dijon)
2 tbsp Worcestershire sauce
1/4 cup brown sugar
1/2 cup/125ml apple cider vinegar
Method
Preparing the Ribs
- Prepare the Ribs: Rinse the ribs under cold water and pat them dry with paper towels. Remove the thin membrane on the back of the ribs for more tender meat.
- Season the Ribs: In a small bowl, mix the sea salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Rub the olive oil onto the ribs, then evenly coat them with the spice mixture. Ensure the ribs are well-seasoned for maximum flavour.
Cooking the Ribs
- Wrap and Bake: Wrap the ribs tightly in foil, creating a sealed packet. Place the ribs on a baking tray and bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender and the meat easily pulls away from the bone.
- Prepare the BBQ Sauce: While the ribs are baking, combine all BBQ sauce ingredients in a saucepan. Bring the mixture to a simmer over medium heat, stirring frequently. Let it cook for about 20 minutes or until it thickens slightly. Adjust the seasoning to taste.
Grilling the Ribs
- Preheat the Grill: About 15 minutes before the ribs are done in the oven, preheat your grill to medium-high heat.
- Grill the Ribs: Carefully remove the ribs from the oven and unwrap them. Place the ribs on the preheated grill and generously brush them with the BBQ sauce. Grill the ribs for 10-15 minutes, turning occasionally and basting with more sauce, until they develop a beautiful, caramelised crust
