British Lamb.  

A double-loin chop of finest free range lamb.  Delicious when seared in a pan until brown but not cooked through, and then finished in the oven.

All of our aged lamb is high welfare, free range, prime British lamb. Responsibly reared in the Glens of Scotland and South Downs.

To cook a Barnsley chop, season both sides with salt and pepper. Heat a little oil in a frying pan over medium-high heat. Add the chops and sear for 3-4 minutes on each side until golden brown. Reduce the heat and cook for another 4-5 minutes on each side for medium-rare, or longer if you prefer well-done. Rest the chops for a few minutes before serving. Serve with mashed potatoes, seasonal vegetables, and mint sauce. For extra flavour, baste with butter and herbs during cooking. Enjoy a classic, hearty British meal.
