An oyster cut chicken thigh on the bone, with the skin. Great for roasting or barbecuing.

Marinate bone-in chicken thighs in a mix of olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper. Let sit for at least 30 minutes. Preheat oven to 190°C. Arrange chicken in a baking dish, add sliced onions, bell peppers, cherry tomatoes, olives, and lemon slices. Drizzle with olive oil and sprinkle with additional herbs. Bake for 40-45 minutes, or until chicken reaches an internal temperature of 74°C. Garnish with fresh parsley and serve with a side of couscous or a green salad.
